Chewy Gingerbread Bars

Slightly chewy, perfectly spiced, and subtly sweet, these chewy gingerbread bars will be the hit of your holiday cookie swap! Made with Clover Sonoma Pasture Raised Organic Butter, these bars melt in your mouth and bring all the holiday vibes.

Ingredients

  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 1/3 cup Molasses, not blackstrap
  • 2 sticks Clover Sonoma Pasture Raised Organic Salted Butter, melted
  • 1 egg
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 3 tsp ginger
  • sprinkle of salt
  • 3 cups all-purpose flour

Directions

Preheat oven to 350ºF.

Combine all sugars and molasses in a bowl.

Pour melted butter into mixture and whisk to combine. Whisk in egg.

Combine, baking soda, cinnamon, ginger, and salt in small bowl. Gently mix into wet ingredients.

Fold in flour, incorporating a few scoops at a time until fully combined. The dough will be thick.

Grease a 9x13 baking pan or line with parchment. Press dough evenly into pan.

Bake for 22-25 minutes. Let cool for one hour after removing from oven.

Cut evenly into 24 bars, or 48 if you'd like to make bite sized bars.

Top with your favorite cream cheese frosting and serve!
