Summer Corn Salad with Greek Yogurt Ranch

Meet the perfect summer side for all your summer grilling! This summer corn salad is topped with a zesty ranch made with Clover Sonoma Pasture Raised Organic Greek Yogurt for a creamy and refreshing finish.

Ingredients

Summer Corn Salad

  • 5 ears of corn, grilled
  • 1 cup halved cherry tomatoes
  • 1 avocado, diced
  • 1/2 cup red onion, diced
  • Handful of basil, julienned (reserve some for garnish)

Greek Yogurt Ranch

  • 1/4 cup Clover Sonoma Milk
  • Fresh herbs (1 tbsp Dill, 1 tbsp Chives, 1 tbsp Italian Parsley)
  • 1 clove garlic, minced
  • Salt and pepper to taste

Directions

Brush corn with olive oil and grill until slightly charred. Let cool and remove kernels from cob.

Combine cooled corn with tomatoes, avocado, red onion and basil.

Combine ingredients for Greek Yogurt Ranch and mix well.

Drizzle Greek Yogurt dressing over corn salad. Finish with fresh basil leaves.
