Brown Butter Pumpkin Spice Rice Krispie Treats

Spice up your Thanksgiving dessert with this creative take on “pumpkin pie” from Sugar & Charm/Eden Passante! This Rice Krispies treat pie is simple, festive, and still brings classic Fall flavor!

Ingredients

Pumpkin Cake:

  • 1 cup Clover Sonoma Unsalted Butter (2 sticks)
  • 20 ounces of mini marshmallows
  • 12 ounces Rice Krispies (1 box)
  • 1/2 tsp sea salt
  • 1 1/2 tsp pumpkin pie spice
  • 1-2 tsp orange food coloring
  • 3 ounces vanilla frosting (optional for the garnish)

Black Cocoa Whipped Cream:

  • 1 1/2 cups Clover Sonoma Pasture Raised Organic Heavy Cream
  • 1/4 cup black cocoa powder
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

In a large pot, melt Clover Sonoma Unsalted butter until golden brown.

The browning process is essential as you want the butter to brown for the flavor of the Rice Krispie treats.

On low heat, add in the marshmallows and coat them in butter by turning them with a wooden spoon or spatula.

The marshmallows will begin to melt as you stir.

Stir until they are fully melted, like marshmallow cream.

Remove from heat and add the Rice Krispies Cereal, pumpkin pie spice and salt and stir until it’s very sticky and blends together. It’s essential to remove from the heat so it does not continue to cook.

Quickly remove half of the mixture and place in a bowl to the side, this will be the pie crust.

Add the orange food coloring to the remaining mixture in the pot and stir. It takes a minute for it to blend, but keep stirring. You want to do this before the mixture sits so it doesn’t harden.

Press the “crust” mixture around the edges of a springform pan (easy to remove the edges) or an 8-9 inch round cake pan. You can also do a pie dish if you prefer!

Press it around the edges, leaving a hole in the middle. Using parchment paper to press the edges helps keep my hands clean!

Add the orange Rice Krispies to the middle and press down to make it even.

Let them sit for 30 minutes, then remove the edges of the pan and cut into triangles “pie slices” with a buttered knife.

Add a dollop of frosting to make it look like whipped cream!
