Cottage Cheese Egg Bites

Looking for an easy protein-rich breakfast? Clover Sonoma’s Organic Pasture Raised Eggs and Organic Cottage Cheese are the base of these egg bites, customizable with cheese, peppers, mushrooms, spinach, and whatever else you love!

Ingredients

  • Nonstick cooking spray
  • 8 large eggs
  • 1 cup (8 ounces) Clover Sonoma Cottage Cheese
  • 1 ½ cups (6 ounces) shredded Clover Sonoma Medium Cheddar Cheese
  • ½ teaspoon kosher salt (such as Diamond Crystal)
  • ¼ teaspoon black pepper
  • Your preferred inclusions! Examples: raw chopped vegetables such as onion, scallions, bell pepper, or spinach. Protein such as cooked chopped bacon or sausage.
  • Finely chopped herbs (optional), such as basil, parsley, chives, or cilantro

Directions

Preheat oven to 325 degrees and thoroughly coat a 12-cup muffin pan with nonstick cooking spray.

Place the eggs, Clover Sonoma Cottage Cheese, 1 cup of the shredded cheese, and the salt and pepper in a blender. Blend until smooth.

Place the muffin pan on a sheet pan. Pour the egg mixture into the muffin cups, filling each three-quarters of the way.

Top with your preferred inclusions and remaining cheese.

Bake for 25 minutes until set.
