Eggnog-Panettone Overnight French Toast Casserole
Pumpkin Bread

Ingredients
- 1 1/2 cup pumpkin puree
- 8 tbsp @Clover.Sonoma Organic unsalted butter, at room temperature
- 3 @Clover.Sonoma Organic eggs, at room temperature
- 1 1/2 cup white sugar
- 2 1/2 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- Pinch of salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground cloves or ground ginger

Preheat oven to 350ºF/180ºC. Generously grease a loaf pan with butter and dust it with a mixture of sugar and cinnamon (alternatively, use just flour).

In a large bowl or using a stand mixer, mix the pumpkin puree, butter, eggs and sugar. Add the flour, baking powder, baking soda, salt, cinnamon, nutmeg and cloves, and mix until the ingredients are well combined.

Pour the mixture into the pan and bake for 60 minutes, or until a toothpick inserted in the center comes out clean.

Let cool down for 10 minutes and turn it onto a wire rack to cool completely.
