Ingredients

Directions

1

Pour the heavy cream into a food processor. Process on high speed until it thickens into whipped cream and eventually separates into butter and buttermilk (about 5 minutes).

2

Pour the mixture into a fine mesh strainer or cheesecloth, draining out the buttermilk.

3

Rinse the butter under cold water, gently kneading it to remove excess buttermilk to prevent spoilage.

4

Add strawberries, honey, vanilla, and salt to the food processor and puree. Return the butter to the food processor with the strawberry mixture.

5

Pulse a few times until the strawberry mixture is well incorporated in the butter with a few strawberry specks remaining. You may need to use your hands to knead the butter to fully incorporate.

6

Transfer the butter to heart-shaped silicone molds. Use a spatula or butter knife to smooth the top.

7

Refrigerate for at least 1 hour to firm up before removing from mold.

8

ransfer to an airtight container and refrigerate. Let soften at room temperature for a few minutes before serving.
