Clover Sonoma Lavender-Lemon Shortbread Cookies

Buttery tender with a hint of citrus and sun-kissed summer lavender, these Lavender-Lemon Shortbread cookies get their mouth-watering richness from our Clover European Style Butter. With more sweet cream butterfat than our regular butter, you’ll taste why bakers prefer this super premium option which delivers intense buttery flavor in every bite! Ingredients

  • 1 cup Clover European Style Unsalted Butter (very cold)
  • 3/4 cup powdered sugar
  • 2 cups all purpose flour
  • 1/2 teaspoon sea salt
  • zest of (3) lemons
  • 2 tablespoons dried culinary lavender

Directions

Combine powdered sugar, flour and salt in a large bowl and mix to combine.

Cut (2) sticks of cold Clover European Style Butter into small cubes. Add to the flour mixture and blend in with a pastry cutter until well combined. *The texture will be crumbly.

Add lemon zest and dried lavender. Use your hands to knead the dough until the ingredients are combined and the dough comes together in a ball.

Roll out the dough on a heavily floured pastry cloth to about 1/2" thickness.

Use a small mason jar ring or biscuit cutter to cut out cookies. Transfer to a baking sheet lined with parchment paper or a silicone baking mat. Re-knead leftover scraps together, roll out, and repeat until all the dough is used.

Place cookie tray with unbaked cookies in the freezer for at least 20 minutes prior to baking (do not skip!).

Preheat oven to 325F

Bake chilled cookies on the center oven rack for 13 minutes.

Remove and let rest for 5 minutes before transferring cookies to a cooling rack.
