Nothing says “comfort food” like a warm grilled cheese sandwich served fresh from the pan and oozing with melty goodness. Kids love ’em. Adults love ’em too. It’s a simple, satisfying fix that’s perfect for a nutritious lunch, after school snack, or a quick weeknight dinner.
In honor of National Grilled Cheese Sandwich Day we decided to share our udderly Clo-lossal version of this classic favorite. We started with Clover Organic Farms Shredded Three Cheese Mexican Blend (a gourmet mix of Monterey Jack, Cheddar, and Pepper Jack Cheeses available at Costco), Clover Salted Butter, and fresh slices of sprouted whole grain bread from our local friends at Alvarado Street Bakery in Petaluma.
Top one slice of bread with a smear of mayonnaise, and spread a little Dijon mustard on the other slice. Note: this is optional but helps the cheese stick to the bread.
Sprinkle a generous handful of cheese over the mayo, and top with the other slice (mustard side down). Finish by spreading softened Clover Salted Butter on top of the sandwich.
Lay the sandwich, buttered side down, in a warm skillet over medium heat. Butter the remaining top side of the sandwich, and grill about (2) minutes or until the bread is toasty and golden brown. Gently turn the sandwich over and continue grilling until the cheese is melted and both sides are crisp.
Remove from the pan to a plate and let cool for (1) minute before cutting. Serve with fresh fruit and an ice cold glass of Clover Organic Milk for smiles all around!
