Creamy Broccoli Cheddar Soup

Ingredients
- 3 Tbl. Clover Organic Unsalted Butter
- 3 large cloves fresh organic garlic, minced
- 1/4 cup arrowroot powder (a gluten-free thickening agent)
- 1/2 cup Clover Organic block Cream Cheese (softened and cut into squares)
- 2 Tbl. Clover Organic Sour Cream
- 2 cups organic low sodium chicken or vegetable broth
- 1 cup Clover Organic Heavy Whipping Cream
- 1 cup Clover Organic Whole Milk
- 1 Tbl. smoked paprika
- 1 Tbl. garlic powder
- 1 tsp. each sea salt & fresh ground pepper
- 2 cups organic broccoli florets, chopped
- 1 cup shredded organic carrots
- 2 cups Clover Organic White Cheddar Cheese, grated (plus extra for garnish)
Directions

Melt butter over medium-low heat in a medium size soup stock pot.

Add minced garlic and saute for 1 minute.

Slowly sprinkle in arrowroot powder, whisking constantly, to form a roux.

Add cream cheese and sour cream, continuing to whisk constantly, while slowly pouring in chicken broth and heavy cream a little at a time. *Whisk to incorporate liquid completely after each addition. It should have a smooth and creamy consistency.

Add paprika, garlic powder, salt & pepper. Whisk to incorporate. Let simmer on low heat for 5 minutes, stirring occasionally.

Add broccoli and shredded carrots. Whisk to incorporate and continue simmering for 15 minutes--stirring every few minutes to prevent burning.

Add cheddar cheese and stir until melted into the soup.

Remove from heat and ladle soup into bowls. Serve with a sprinkle of cheddar cheese on top, and toasted rustic sourdough bread slices (if desired).
