Grilled Chicken & Creamy Tzatziki Bowl

Flavorful and healthy, this delicious greek inspired meal-in-a-bowl is packed with protein and veggies, then topped with a duo of creamy Clover Greek Yogurt-herb tzatziki sauce, and ginger tahini. Feel free to experiment with other veggies of your choice! Recipe created by Karen Pavone.

For Chicken:
  • 1/4 cup olive oil
  • 6 garlic cloves, pressed
  • 1 tsp smoked paprika
  • 2 tsp. dried oregano 
  • 1/2 tsp chili flakes
  • sea salt & fresh cracked pepper 
  • 4 large boneless chicken thighs


For Tzatziki Sauce:
  • 1 large cucumber, unpeeled & grated
  • 2 cups Clover Sonoma Organic Plain Greek Yogurt 
  • 3 large garlic cloves, pressed
  • 2 Tbl. olive oil
  • 1 Tbl. fresh lemon juice
  • 1 Tbl. fresh dill, minced
  • 1/2 tsp sea salt


For Ginger Tahini Sauce:
  • 1/2 cup organic tahini
  • 1/4 cup water
  • 2 tsp. grated ginger
  • 1 clove garlic, pressed
  • 2 tsp. tamari
  • 1 Tbl. lemon juice
  • 1 Tbl. honey 


Veggies (for the bowl):

  • 2 persian cucumbers, sliced 
  • 1 avocado, halved & sliced
  • 4 ounces feta cheese, crumbled 
  • 2 cups broccoli florets, steamed crisp tender
  • 1/2 cup sliced mini bell peppers
  • pickled red onion 
  • 3 cups mixed field greens (divided)
  • fresh dill




For Chicken: Combine the first six ingredients in a medium mixing bowl and whisk to combine. Add chicken thighs and toss to coat well with oil/spice mixture. Grill, turning on both sides, until cooked through. Set aside.


For Tzatziki Sauce: Squeeze excess moisture from grated cucumber with a cotton kitchen towel. Combine shredded cucumber with remaining ingredients in a large bowl. Cover and refrigerate at least 2 hours or overnight.


For Ginger Tahini Sauce: Combine all ingredients in a medium bowl and whisk until combined & smooth. *Add more water if a thinner sauce is desired.


Bowl Assembly: In individual shallow bowls, layer the base with field greens, then mound sliced cucumber, broccoli, bell pepper, and pickled onion around the perimeter. Slice cooked chicken thighs and layer in the middle, topped with sliced avocado. Sprinkle with crumbled feta. Dollop with Tzaziki sauce, and drizzle Ginger-Tahini on top. Sprinkle with more fresh dill if desired. Enjoy!
